Val Todil Maceración Carbónica

We choose the early ripening mencía variety vineyards in Valtuille de Abajo to elaborate our Val Todil Carbonic Maceration red wine. The grapes are harvested in boxes of 15 kg maximum, and they reach the winery less than an hour after being cut off. The special technique used makes this wine so particular: whole grapes are introduced in the vessel without crushing nor removing sticks.
Its colour is very deep violet red
In the nose, we can notice that we are dealing with a high intensity wine. It has some typical carbonic maceration aromas: it smells of pastry, caramel, stewed fruit, candies...
The flavour refers to a balanced wine, round, with no edges, light and nice to be tasted.
As we are dealing with such an aromatic wine, it can be served at a temperature of 10-12º C (then, rather fresh), without losing any of its exceptional features. Due to its balanced flavour it can be combined with nearly any kind of food, ranging from fish to a dessert.
